Mexican Casserole

1 box Rice-A-Roni "Whole Grains Spanish" Blend
2 cans chopped tomatoes, drained
1 can sweet yellow corn, drained 
2 big handfuls of fresh spinach
mexican blend shredded cheese (maybe 2 cups total)
1/2 package taco seasoning
1/2 package ranch seasoning 
1 lb ground turkey or ground beef
corn tortillas
Preheat oven to 350*. On the stove top, follow the instructions for the Rice-A-Roni and prepare your meat and rice. If you don't want to use the Rice-A-Roni, simply brown your meat of choice. When the meat is browned (and the rice is cooked according to the box directions), add 1/2 packages of taco seasoning and ranch seasoning. stir and allow to cook for a little bit longer, and then set aside for layering.

In a medium-sized casserole dish, begin with a layer of corn tortillas. I had to cut one in order to make sure the entire bottom of the dish was covered.
Next, start adding ingredients layer by layer. add 1 cup of shredded cheese, followed by the meat and rice mixture, spinach, tomatoes, corn, etc. start another layer with more corn tortillas, and continue through the above ingredients. you'll have two layers total.
Cover the casserole in loose foil and bake for 20 minutes. After 20 minutes, take the foil off and bake uncovered for 3-5 more minutes just until the cheese is nicely melted.
*note: On the back of the Rice-A-Roni  box, there are optional instructions if you want to add meat (ground turkey or beef). Please follow those directions! or, if you're a vegetarian, just make the rice according to the regular instructions.
* This was super, super simple and so pretty with all the colors! My husband loved how filling it was and how easy it was to adapt different flavors even after it was cooked like using hot sauce, salsa, sour cream, etc. This will become a new regular on those busy nights when we still want to eat something homemade and delicious.

Delicious Meat Marinades

My mom introduced me to McCormick Grill Mates last summer and I use them weekly! They have the best flavor options and every single flavor we have tried has been delicious! Our favorite is Mojito Lime but we have not found one that we didn't like. They work great on chicken, beef, & pork. I usually marinate by meat in it all morning and afternoon and then throw it on the grill (or George Foreman) for dinner. The smell and taste is wonderful! My mom marinated for 15-30 minutes before and then cooks her in the oven and it comes out flavor and tender as well! Either way, these marinade mixes are winners! Did I mention, how fast they are and what an easy dinner these make? LOVE THEM for that alone!

Nacho Hash

1 box Mexican Rice-A-Roni
1 lb. ground beef
2 cups water
1 can corn, drained
1 can black beans, drained & rinsed
1 can petite diced tomatoes, drained
taco seasoning
shredded cheddar cheese
sour cream
tortilla chips
sliced olives & salsa, optional toppings

1. Brown beef and drain grease.
2. Add Rice-A-Roni rice-vermicelli mix to beef and saute until vermicelli is lightly golden brown.
3. Add water, seasoning packet from Rice-A-Roni beans, corn, and 1/2-3/4 package of taco seasoning.
4. Bring to a boil then reduce heat, cover & simmer without stirring 20-30 minutes or until rice is done.
5. Stir in can of tomatoes and heat through.
6. Remove from heat & let stand 3-5 minutes.
7. Serve in bowls. Top with shredded cheddar cheese & sour cream. Eat with tortilla chips for scooping.

* This has been a family favorite since we first got married. There was a time my husband asked for it weekly. I love how easy it is and I always have these ingredients on hand. I love that it includes meat, plenty of veggies, and some grain and then is topped with dairy products which really makes it a well rounded meal in our home. We love the flavor and texture combination and how filling it is. Even my extremely picky 3 year old eats this dish! This makes quite a lot for our family but it reheats great and even has more flavor the next day. It is also good rolled up in tortillas.

Sweet and Sour Meatballs and Fried Rice


1 to 1-1/2 lbs ground beef (I used 1 lb and it made 14 meatballs)
3/4 cup oats
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk
1 tsp. salt
1 tsp Worcestershire sauce

Mix ingredients and form into 12 2-inch balls. Place in casserole dish, cover with sauce (recipe follows) and bake uncovered at 350 degrees for 30 minutes.

Sauce for meatballs

1/2 cup brown sugar
1/4 cup vinegar
1 tsp mustard
1/4 cup barbecue sauce
1 tsp Worcestershire sauce

Fried Rice

1/4 lb. bacon
1 cup diced onion
3/4 cup diced celery
1 bell pepper, diced (I used 1/2 each of a red and green pepper.)
3 Tbsp soy sauce
3 cups COLD, cooked rice (I cooked mine before I started everything else so it was warm and turned out fine when heated through with everything.)

Cook bacon until crisp. Remove from pan and sauté vegetables in bacon fat. Add rice and soy sauce until heated through. Crumble bacon on top and stir all together.

* We were a bit hesitant to try this in our house since we are not fans of meatballs but they were simply amazing! The meatballs and sauce had such a delicious flavor. The rice was so simple to make and it turned out incredible. Neither my husband or myself could get enough of this meal! This recipe is a keeper for sure!

Burrito Casserole




UPDATE:  Lawry's took the Chimichurri seasoning off the market! :-(

1 lb. ground beef
1 15 oz can black beans
1 8 oz can tomato sauce
1 1/2 C water
1 1.4 oz package Lawry's Chimichurri Burrito Casserole seasoning
8 flour tortillas
1 1/2 C shredded Mexican Cheese blend

1. In a large skillet, brown ground beef. Season with salt and pepper.
2. When beef is browned, drain fat. Drain and rinse black beans and add them to browned beef.
3. In a small mixing bowl, mix together water, tomato sauce, and Lawry's seasoning packet.
4. Pour 1 cup of the red sauce into your beef and bean mixture. Stir to incorporate.
5. Fill each tortilla with some of the meat mixture.
6. Roll tortilla up. Lay it in 9x13 pan, greased with cooking spray. Repeat with other 7 tortillas.
7. Pour the rest of the red sauce over the top of the rolled burritos.
8. Cover with cheese.
9. Bake at 350* for 15 minutes or until heated through and cheese is melted.
10. Serve with desired topping such as, lettuce, tomatoes, green onions, salsa, avocado, fresh diced tomatoes, cilantro, and sour cream.

* I don't think a recipe could get any more simple than this one. It was quick to prepare and quick to cook. The end result was a delicious and tasty dish! We served it with salsa, sour cream, cilantro, and lettuce. It was very filling and satisfying and will be repeated in our home again!

Sloppy Joes

1 1/2 lb extra lean ground beef (I only used 1 lb)
1 onion, chopped
1 red pepper, chopped (optional)
1 clove garlic, minced or 1/4 teaspoon garlic powder (optional)
1 6 oz can tomato paste
1 15 oz can tomato sauce
3 tablespoons Worcestershire
1/4 cup brown sugar
1 teaspoon salt (I just did it to taste)
1/2 teaspoon ground pepper (I just did it to taste)
water 1/4 to 1/2 cup to thin sauce, if needed (I did not have to do this)

Brown ground beef in skillet. Drain off any grease. Add chopped onion, red pepper and garlic. Season with salt and pepper. Saute until onion is softened. Add tomato paste, sauce, Worcestershire and brown sugar. Cook over medium heat. If mixture is too thick, thin with 1/4 to 1/2 cup of water. Serve with hamburger buns. Top with cheese, if desired.

* My husband has never been a huge sloppy joe fan until he had these. He downed quite a few because he could not get enough. They were so delicious and so easy. I had everything on hand (except the red pepper) and it all came together within minutes. I'm sure my hubby will be asking for these again very soon and I have no problem eating them myself again. :-) I like to serve them with chips or a green salad.

Lemon-Soy Marinated Steaks

1/3 cup lemon juice
1/4 cup soy sauce
3 Tablespoons vegetable oil
1 Tablespoon brown sugar
1 Tablespoon lemon zest
1 teaspoon minced garlic

Combine everything in a bowl until the sugar is dissolved. Place the steaks in a Ziplock bag and pour the marinade over the steaks. Let them sit for about 24 hours, turning every few hours. Grill steak how you like best. This recipe can cover about 3 steaks nicely, about 1 lb each.

* This marinade was amazing! I could smell the steaks marinating every time I walked past the fridge for a day and a half. It was such a simple marinade too and I loved that I already had everything on hand to make it. It had such a light but flavorful taste to it and we loved the way all the flavors blended so well together. We will definitely be using this recipe again!

Baked Ziti

1lb. ground beef
1 cup onion, chopped
2 garlic cloves, minced
1 (32 ounce) jar meatless spaghetti sauce
1 cup chicken broth
1 teaspoon oregano (I used Italian seasoning)
1 (16 oz) package ziti pasta, cooked and drained
2 cups shredded mozzarella cheese
1 cup grated parmesan cheese

1. Preheat the oven to 350 degrees. In a large skillet, add ground beef, onions, and garlic. Cook over medium high heat stirring frequently until the beef is browned. Stir in spaghetti sauce, chicken broth and oregano. Reduce heat and simmer for 10 minutes.

2. Stir in 1 cup of sauce into the cooked ziti noodles. Spoon ½ of the ziti mixture into a 13×9” baking dish. Sprinkle 1 ½ cups mozzarella cheese and ½ cup parmesan cheese over the top of the ziti mixture. Top with 2 cups of the sauce, then add remaining ziti mixture and top that with the remaining sauce.

Cover with aluminum foil and bake at 350 degrees for 20 minutes. After 20 minutes remove from oven, uncover and sprinkle the top with the remaining mozzarella and parmesan cheese. Return to oven and bake for 10 minutes or until the cheese has melted.

* This was super yummy and easy to make. The ingredients for this recipe are staples in our house so it makes this dish very convenient. The recipe says it serves 6 but I would say it serves a lot more than that. It makes a ton. I served it with French bread and that was honestly all it needed since it was so filling and flavorful.

Tater Tot Casserole

1 lb ground beef
1 can cream of celery soup
1 pkg frozen tater tots

Brown the ground beef and drain the fat. In a large bowl, combine beef and can of soup and fold until beef is covered in soup. Add enough frozen tater tots so that they are all incorporated in the meat/soup mixture. (I usually use a bit more than half the bag) Pour into a 9x13 pan and spread evenly. Cook at the temperature that the bag of tater tots states along with the time. You want the tater tots golden brown. Serve with ketchup on top.

* This was a family favorite growing up. Sometime we like to add cheese on top or mixed through the casserole but it's just as good without it.

Lasagna

1. Fill a pot about half full with water. Put on stove and bring to a boil. When water is boiling add lasagna noodles.

2. Chop 1/2 of a onion very fine. In a frying pan, saute onion and garlic in about 2 Tablespoons oil.

3. Add ground beef to onion mixture and cook thoroughly. Add spaghetti sauce.
(You can replace ground beef with 1/2 butternut squash, 1 zucchini, and 1 carrot)

4. In a bowl combine 1/2 carton of ricotta cheese with 1/2 carton of Romano cheese. Add a little garlic if desired and about 1 teaspoon Italian seasoning. Mix together.

5. Lightly grease the bottom of a baking sheet. Cover the bottom with the cooked noodles.

6. On top layer of the noodles, spread the ricotta cheese mixture. Add another layer of noodles. Add the meat sauce on top. Top with grated mozzarella cheese.

7. Bake at 375* for about 20-30 minutes.
