3 cups flour
1 Tbsp baking powder
1 1/2 tsp cinnamon
1 tsp salt
2 eggs, whisked
2 1/2 cups shredded zucchini
2 cups sugar
1 cup vegetable oil
2 tsp vanilla
1 1/4 cups chocolate chips
1. Preheat oven to 350* and fill a cupcake pan with liners.
2. In a large bowl combine flour, baking powder, cinnamon and salt.
3. In another bowl mix together the eggs, zucchini, sugar, oil and vanilla. Pour into flour mixture and stir until well combined. Fold in chocolate chips.
4. Pour batter into muffin cups until 2/3 full.
5. Sprinkle topping on muffins. (optional but you want this!!!)
6. Bake for approximately 20-25 minutes or until toothpick comes out clean.
OPTIONAL TOPPING
2 Tbsp brown sugar
2 Tbsp white sugar
2 Tbsp oats
1/2 tsp cinnamon
* These are AMAZING! No, really they are INCREDIBLE! My husband normally doesn't eat stuff like this and he couldn't get enough of them. He complimented them over and over and I made 3 batches within a couple weeks. My youngest consumed multiple in a sitting every single time and had these for a "treat" later instead of her usual candy craving. I froze some but all I could manage to save from my family were 2 but they unthawed great. I crave these! I will make these over and over.

Easy Parmesan Knots
1 tube (12oz) refrigerated buttermilk biscuits
1/4 c canola oil
3 Tbsp grated Parmesan cheese (I used the green can stuff that you put on pasta)
1/2 tsp garlic powder
1 tsp dried oregano
1 tsp dried parsley flakes
1. Roll each biscuit into a 12" rope and tie into a knot; tuck ends under. Place 2" apart on a greased baking sheet. Bake at 400* for 8-10 minutes or until golden brown.
2. In a large bowl, combine the remaining ingredients; brush the warm knots with the mixture.
* These were SO easy but looked and tasted like I made them from scratch. They were the perfect addition to our Chili's Monterey Chicken or just about any meal. They would be awesome with a pasta meal as well.

Mom's Award Winning Banana Bread
2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter or shortening
1 cup (2 medium) bananas - mashed (I always use the mixer on them first to get them smooth and it is best if they are going bad)
1 cup sugar
1/3 cup milk and 1 tsp lemon juice
1/2 cup chopped nuts (optional)
Combine dry ingredients. Cream butter and sugar. Add eggs and bananas. Blend well. Combine milk and lemon juice. Add dry ingredients to banana mixture alternately with milk. Stir in nuts. Spread into 2 greased loaf pans (8" or 9" square pan works too). Bake at 350* for 60-70 minutes (check at 50 minutes) or until toothpick inserted in center comes out clean.
* I have never found a better banana bread recipe before! My mom won numerous state and county fair awards for this delicious bread and it is a family & neighbor favorite.

Breadsticks & Pizza Dough
1 1/2 cups warm water
1 Tablespoon sugar
1 Tablespoon yeast
1/2 teaspoon salt
3-4 1/2 cups flour
1. In a large bowl, combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.
2. Add salt and stir. Add 1 1/2 c. flour and mix well. Gradually add more flour (usually between 3-4 cups, depending on your elevation and your humidity) until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.
4. Spray a glass or metal bowl with cooking spray and place dough in the bowl.
5. Cover and allow to rise for 45 minutes or until doubled in bulk.
6. Remove from bowl and place on a lightly-floured surface.
For Pizza: Roll out and bake with toppings.
For Breadsticks:
1. Spray a baking sheet with cooking spray. Roll into a rectangle and cut into 12 strips with a pizza cutter.
2. Roll out each piece of dough into a snake and then drape over your forefinger and twist the dough. Place on baking sheet and repeat with remaining 11 pieces of dough. Try to space them evenly, but it's okay if they're close.
3. Cover pan and allow dough to rise for another 30 minutes.
4. When there's about 15 minutes to go, preheat your oven to 425.
5. Rub butter and garlic salt and Parmesan cheese.
6. Bake for 10-12 minutes.
* I used this recipe to make pizza crust. It was an easy and quick recipe and it turned out yummy. I rolled my dough into a rectangle and made one very large pizza on a cookie sheet. Next time I make this pizza dough, I am going to bake the crust a little bit before baking it with all the toppings on it. The center didn't cook quite as much as we would have liked but it was still yummy! Some Italian seasonings on the crust would be good too!

Easy Cheesy Rolls
1/4 cup butter or margarine
2 Tablespoons Parmesan cheese, grated (from a can or jar, not fresh)
1 Tablespoon dried basil
1/2 teaspoon garlic powder (optional)
1/2 cup cheese, shredded (any kind works)
1 tube canned refrigerator biscuits, plain or buttermilk (8-10 biscuits per can)
Melt butter or margarine and combine with the Parmesan cheese, basil, and garlic in a small bowl. Put the shredded cheese in a separate bowl. Remove biscuit dough from the can and separate into individual biscuit rounds. Flatten each round of biscuit dough slightly and place a little shredded cheese in the center, folding the dough around the cheese to form a ball. Pinch the dough together to enclose the cheese. Dip the ball of dough into the melted butter mixture and roll it around to cover completely. Place the cheese-stuffed biscuits balls on a baking sheet. Bake at 375* for approximately 5-8 minutes or until golden brown. Great with spaghetti or lasagna.

Pumpkin Cinnamon Rolls
2 Tablespoons yeast1/2 cup warm water
1/2 cup canned pumpkin
2/3 cup sugar
1/2 teaspoon salt
1 egg, beaten
1/4 cup melted butter
1/4 teaspoon ground cloves
1 teaspoon cinnamon
4-5 cups bread flour
1/2 cup brown sugar, packed
2 Tablespoons cinnamon
2 Tablespoons melted butter
Dissolve yeast in warm milk. Wait 5 minutes. Add pumpkin, egg, sugar, butter, salt, cinnamon and cloves and mix well. Slowly add flour one cup at a time. Scrape down sides of bowl after each addition of flour. Turn into lightly greased bowl, cover and set in warm place until double in bulk. Punch down dough and let rest for 5 more minutes. Roll dough out into a rectangle.
Brush dough with melted butter. Sprinkle the dough with sugar and cinnamon mixture. Starting with long side of dough, roll up jellyroll style. Pinch seams to seal. With sharp serrated knife cut roll into 12 1 in. pieces. Place rolls, cut side up in greased 9*13 pan. Cover and let rise until double, 30 to 45 minutes.
Bake rolls at 350 degrees about 20 minutes or until golden brown. Drizzle with caramel frosting as soon as they come out of the oven. Let cool until warm, add the rest of the frosting. Enjoy!
Caramel Frosting
1/4 cup butter1/2 cup brown sugar, cooked
2 Tablespoons milk
1/4 teaspoon vanilla
pinch of salt
1/2 to 3/4 cup sifted powdered sugar
In a small saucepan, heat butter until melted. Stir in brown sugar and milk. Cook over med. Low heat 1 minute. Transfer to small bowl and cool mixture. Stir in vanilla, salt, and powder sugar. Beat with Electric mixer until well blended. If necessary, add more sugar for desired consistency.

Sweet Corn Bread
1 1/2 cups flour2/3 cup sugar (you can go less if you want)
1/2 cup cornmeal
1 Tablespoon baking powder
1/4 teaspoon salt
1 1/4 cups milk
2 eggs, lightly beaten
1/3 cup canola oil
3 Tablespoons melted butter
Combine dry ingredients, then combine wet ingredients in separate bowl. Add wet mixture to flour mixture and stir just until blended. Pour into 8" square baking pan and bake at 350 degrees for 35 minutes. FOR MUFFINS: pour into muffin cups and bake at 350 degrees for 18-20 minutes.

Pumpkin Bread
1 1/3 cup sugar1/3 cup butter
2 eggs
15 oz can pumpkin or 1/2 of 29 oz can
1/3 cup water
1 1/2 cups + 2 1/2 Tablespoons flour
1 teaspoons baking soda
3/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon cinnamon (can add 1 teaspoon if desired)
1/2 teaspoon cloves
Cream sugar and butter.
Add eggs and beat.
Add pumpkin and water and beat.
Add dry ingredients.
Bake at 350* for 30 minutes.
Frosting:
3 oz cream cheese
1/2 stick butter
1 teaspoon rum flavoring
1 teaspoon vanilla
enough powdered sugar to make a good consistency.

French Bread
1 pkg dry yeast1/4 cup warm water
1 cup hot water
1 1/2 Tablespoon sugar
1/2 Tablespoon salt
2 1/2 Tablespoon oil
3 cups flour
Dissolve yeast in the 1/4 cup warm water.
Add sugar.
In a large bowl combine hot water, salt, oil, and 1/2 the flour.
Mix well.
Stir in dissolved yeast.
Stir in remaining flour.
Knead until smooth.
Let rise 5 minutes.
Knead again.
Repeat 4 times.
Shape into French loaf.
Place on baking sheet.
Let rise.
Bake at 400* for 20 minutes.
Buttermilk Biscuits
1 cup flour2 teaspoons baking powder
1/8 teaspoon salt
3 Tablespoons shortening
1/2 cup buttermilk
Preheat oven to 425*
Stir dry ingredients (flour, baking powder, and salt) together.
Cut in shortening with a pastry blender until pieces are about the size of peas.
Add buttermilk. Stir with a fork just until moistened.
Flour board.
Knead dough until it holds together.
Roll out dough (about 1/2 inch thick).
Cut biscuits and place on baking sheet.
Bake at 425* for about 15 minutes.
Homemade Flour Tortillas
1 cup flour1/4 teaspoon salt
1/8 teaspoon baking powder
1/4 cup shortening
1/4 cup lukewarm water
Combine flour, salt, and baking powder in a bowl. Blend in shortening with a pastry blender. Gradually stir in enough milk to make a soft dough. Divide the dough into small pieces. Roll to a thin circle about 6-8 inches. Cook on a heated griddle until lightly browned. Turn. Let cool.

Quesadillas
When tortilla is on its second side, sprinkle with cheese, olives and chilies. Fold tortilla in half. Heat until cheese melts. Cut into wedges and serve with salsa.
Homemade Pizza Crust

4. Twist each strip and place on baking sheets coated with cooking spray. Brush strips with 1/4 cup low fat margarine, melted and sprinkle with sugar mixture.

Pumpkin Chocolate Chip Muffins
5 eggs - beat
Add:
1 to 1 1/3 cup oil
1 16oz can of pumpkin
2 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon soda
2 - 3.4oz. instant vanilla pudding
Mix until creamy
Add chocolate chips
Bake at 350 until done ... About 23-30 minutes (depending on oven) for regular size muffins and 20-25 for mini muffins. You just kind of have to watch them and see if they are golden brown on top :)
Add:

2 pkgs yeast (fast rising is best)
1/2 cup warm water
1/2 cup sugar
1/2 cup softened margarine
3 eggs
2 teaspoons salt
3/4 cup warm water
4 1/2 cups flour
Dissolve yeast in warm water. Set aside. Mix together sugar, margarine, eggs, and salt. Add 3/4 cup warm water to this mixture. Add the yeast mixture. Mix well. Gradually add flour. Mix well. Place in a greased bowl and let rise until double, about 1-1 1/2 hours. Mix down when ready. Divide dough in half. Roll one half out into a rectangle.
Filling:
1/2 cup sugar
1/2 cup softened butter
rind of 1 orange
Make the filling by combining all the filling ingredients above. Spread 1/2 of mixture on rectangle. Roll up like a jelly roll and slice about 1"-1 1/2" thick. Put in greased muffin pan and let rise for about 2 hours (until double) Bake at 400* for 10-15 minutes, until golden brown. Do the same for the other half of the dough.
These rolls have such a good flavor that you don't even need frosting for them. Very elegant for special occasions.
